Description

Our cheese is made directly on the farm, the raw milk is taken directly from the milking shed to the cheese manufacturing area, still warm from the cow, you can not get fresher than this.

Raw, Jersey milk cheese combines the natural advantages of unpasteurized milk with the specific nutritional perks of Jersey cow milk, offering enhanced nutrient absorption, rich beneficial bacteria, and easier digestion.

Nutritional Benefits of Jersey Milk A2 Casein Protein: Jersey cows produce milk that contains primarily A2 beta-casein protein rather than A1, which many people find easier and gentler on the digestive system.

Higher Butterfat and Solids: Jersey milk naturally contains higher levels of butterfat, fat-soluble vitamins (A, D, E), and minerals like calcium compared to standard Holstein milk.

Conjugated Linoleic Acid (CLA): High natural fat content translates to more CLA, a healthy fatty acid linked to immune and anti-inflammatory support.

Benefits of the Raw (Unpasteurized) Active Enzymes: Raw cheese retains natural enzymes like phosphatase and lactase, which help your body break down fats, proteins, and remaining lactose.

Gut Health and Probiotics: The unheated fermentation process preserves beneficial microbes that support a balanced gut microbiome and Vitamin K2:

Unpasteurized and aged cheeses are exceptionally rich in vitamin K2, which helps direct calcium straight to your bones and teeth rather than your arteries.

Low Lactose: The aging process for raw cheese (typically aged 60 days or more by law) allows beneficial bacteria to consume nearly all the lactose, making it virtually lactose-free.
